The Basilisk Fizz: muddled basil and mint, FELLOW Saltbush & Olive Vodka and ginger beer, finished with a spiced rum float and a jalapeño-basil foam. It hisses, it fizzes, it's an absolute showstopper.

Ingredients

• 30ml FELLOW Saltbush & Olive Vodka
  
• 15ml spiced rum, to float
• Ginger beer
• 15ml Basil sugar syrup
• Fresh basil & mint leaves
• Jalapeño-basil foam (recipe below)

For the foam: blend 1 cup basil leaves, 1 large jalapeño, 30ml sugar syrup and 1 egg white. Charge with a nitrous canister and chill in the fridge.

method

1. Place basil and mint leaves in each glass, cover with the basil syrup and muddle to release the oils
2. Add the vodka, then fill the glass with ice
3. Top three-quarters full with ginger beer, leaving room for the foam
4. Carefully float the spiced rum on top
5. Crown with the jalapeño-basil foam

Hosting tip: Prepare the foam and basil sugar syrup the day before to save time when your guests arrive.
